I. Ingredients for making Shrimp Shumai and Pork Sumai
For 3 people
- 0.5 kg of pork (pureed)
- 300 grams of shrimp
- 3 onions
- 6 sprigs of green onions
- 2 tomatoes
- 4 cloves of garlic
- 1 tablespoon cooking oil
- Common spices, a little (sugar/ salt/ seasoning powder/ ground pepper)
II. How to choose fresh and delicious ingredients
1. How to choose fresh and delicious shrimp
Choose shrimp with firm, translucent shells and a fresh, smoky, rather than fishy, smell, as these are fresh shrimp that have been recently caught.
Pay close attention to the shrimp’s tail; if the tails are folded together, the shrimp are fresh. Conversely, if the tails are spread out, these may be shrimp that have been injected with chemicals or water to enlarge them.

When you pick up a shrimp and see its body curl up, or if you gently press it and see a slimy fluid oozing out, it means the shrimp is dead or has been frozen for too long and is no longer fresh.
2. How to choose fresh and delicious meat
When buying pork, choose cuts that are bright pink in color, feel slightly sticky to the touch, and retain a certain elasticity; these are signs of fresh, high-quality meat.
It’s best to buy pork belly because it has both meat and fat, ensuring the dish isn’t too greasy from too much fat or too dry from using only meat.
If possible, you should go to the butcher shop early in the morning, as the meat is usually fresher. Avoid buying meat in the late afternoon or evening.

Avoid buying meat that is discolored, bruised, or has an unusual odor; this indicates that the meat has been left out for too long, is about to spoil, and is no longer fresh.
For shrimp and pork dumplings, after purchasing fresh, high-quality pork, you need to mince it finely or use a food processor. Alternatively, you can ask the vendor to mince it directly at the stall, avoiding pre-minced meat where you can’t check the initial quality.
3. How to choose fresh and delicious tomatoes
Fresh, delicious tomatoes have a bright red, evenly colored, firm, glossy, and juicy skin.
Choose tomatoes that still have their green stems firmly attached; these are tomatoes that were harvested when ripe on the vine, and their flesh will be red and delicious.
Avoid tomatoes with scratches, rough skin, or those that are still wet. These are old, overripe tomatoes that should not be purchased.
4. How to choose fresh and delicious onions
You should buy onions with thin, shiny, and evenly colored outer skins; these are fresh onions, suitable for cooking.
If you’re buying onions with roots, choose those with plenty of roots, as these are usually fresh and the roots won’t have fallen off like with older onions.
Do not buy onions that have started to sprout, as they can be harmful to your health when eaten. Also, avoid buying onions that are unevenly colored or those that feel
soft in some places and hard in others; these onions are often bitter and unpleasant to eat.
5. How to prepare Shrimp Shumai and Pork Sumai
1. Prepare the ingredients
Wash 300g of shrimp, remove the heads and tails, peel off the shells, and remove the vein. Then, flatten the shrimp meat with a knife and cut it into small pieces.
Finely chop 6 sprigs of green onions and 3 onions.
Make light X-shaped incisions on the skins of two tomatoes with a knife, then boil them in water for about 1 minute before peeling. Finally, put the tomatoes into a blender and blend until smooth.
Tips: To quickly remove the shrimp vein, turn the shrimp upside down, hold the body with your hand while peeling off both sides of the head, then firmly hold the connection between the head and body, and gradually pull the head away from the body. The vein will be quickly pulled out along with the head.
2. Marinate shrimp and meat
In a bowl, combine 0.5 kg of ground pork, shrimp, chopped scallions, and pre-prepared onions.
Next, add 2 tablespoons of sugar, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, and a pinch of ground pepper. Then, using clean hands, mix all the ingredients thoroughly. Let it marinate for 15 minutes.
3. Shape into balls
Using a teaspoon, take a small amount of the shrimp and meat mixture into your hand, then roll it into a ball.

4. Steamed dumplings
Turn on the stove to medium heat, then pour about 1 liter of water into a large pan, enough to cover half of the pan.
When the water boils, place the shrimp in a steamer basket, put the basket in the steamer pot, and then place the pot of water in the steamer. Cover and steam for 15 minutes.
5. Make shumai with tomato sauce
To make tomato sauce, add 1 tablespoon of cooking oil to a pan, then add garlic and sauté until fragrant.
Next, add the pureed tomatoes, then add the steamed pork dumpling broth along with 2 teaspoons of sugar and 1/2 teaspoon of seasoning powder, then stir well.
Finally, add the steamed dumplings, stir well, and cook over low heat for about 5 minutes. Adjust the seasoning to your taste, then turn off the heat.
6. Present and enjoy
The shrimp and pork dumplings are now ready to be served. With their attractive, bright red color, the dumplings are fragrant, soft, and sweet, combined with the natural tang of tomatoes for a delicious flavor.
